350 Degree Magic

Microwaves count down by the second. Ovens automatically preheat to 350 degrees with the press of a button.

The magic of cooking at 350 degrees isn’t magic at all, but chemistry. It is, for example, the level associated with the Maillard Reaction, the chemical process that gives so many foods a complex flavor profile—and an appealing golden-brown hue—when sugar and protein are heated together just so.

“Without Maillard chemistry we would not have a dark bread crust or golden brown turkey,” wrote the authors of a Royal Society of Chemistry book about the reaction, “our cakes and pastries would be pale and anemic, and we would lose the distinctive color of French onion soup.” The Maillard Reaction—which actually entails a series of reactions—isn’t all toasty goodness, however. It’s also responsible for making apples turn brown, which many people find unappetizing “despite negligible effect on flavor,” the authors write.

The Best Ever Queso!


This was a great recipe…

Velveta is needed to get that smooth consistency.

I also used Monterrey Jack and a strong cheddar.

 I added hot sausage, garlic, onions, hot sauce and a tad of corn starch. 

Ate it with chips, made a scallop potato dish, and a great breakfast poutine with it as well.

Made a chicken pot pie for this little cutie… Used chicken stock base, the usual carrots, celery, onions, potatoes in a light crust… Golden to perfection.

Fish Tacos






This is quickly becoming a favourite at our table... I have been really trying to simplify my flavours in an effort to create distinct yet identifiable dishes. On this plate I made an avocado puree, tomato and cucumber salsa, seasoned cod and fried sweet potato. Everything could be tasted without too much confusion.

Forever in Pursuit - 2013

Occasionally I go to visit a friend simply named Bossfry for a soiree of fine wines and delicious foods; this past session we decided to make poutine and burgers - a man's delight! 
However, we wanted it to be a bit different yet professional, so...

We made fresh onion rings with a bit of club soda, flour and bread crumbs - fried at 365. These little beauties would top our burgers.


Inside the patties we put capers, dijon, garlic, thai red curry, one egg, bread crumbs, cumin and S&P


We made a sweet / white potato mix for our poutine topped with shavings of parmesan cheese and a quick chicken based gravy.

Simple yet totally outstanding taste, with the cheese, the sweet from the sweet potatoes and the rich hot gravy - yum time!


The burgers were stacked high, with tomatoes, lettuce, onion rings, a spicy chutney, and the usual burger toppings as per the taste of the individual.


We discovered the optimal fry to be at 365 degrees - these fries were double fried, so 1st fry was at 325 degrees, then blasted for crunch at 365. Excellent fry or as the Boss refers, "the perfect fry"...
