Foraged Flavor: Finding Fabulous Ingredients in Your Backyard or Farmer's Market

While others have identified in the past which wild plants are edible, Tama Matsuoka Wong, the forager for Daniel, the flagship restaurant of renowned chef Daniel Boulud, and Eddy Leroux, its chef de cuisine, go two steps further, setting the bar much higher. First, they have carefully selected only the wild plants that are worth seeking out for their fabulous flavors. Second, after much taste-testing, they have figured out the best way to prepare each ingredient—a key in getting to know these exciting new foods. In Foraged Flavor, they reveal their seventy-one favorite plants, which are easy to identify and can be harvested sustainably across the country (including at farmers’ markets for those without access to nearby fields and forests). Tama helps readers uncover bright lemony oxalis growing in patches of their lawn or creeping jenny, with its unmistakable leaves and delicate green-pea flavor. Eddy then gives simple recipes to showcase the foraged finds, including Cardamine Cress with Fennel and Orange Vinaigrette; Braised Beef, Dandelion Leaves, and Clear Noodles; and Purslane Eggplant Caponata.

With twenty-five botanical illustrations, fifty color photographs of the plants, and tons of field- and kitchen-tested know-how, Foraged Flavor will be an indispensable guide for cooking enthusiasts.

Full of authentic recipes, Culinary Vietnam teaches how the aspects of flavor, aroma, texture, color, contrast, balance, and even the sound a food makes should be taken into consideration in the planning of a Vietnamese meal.

Author Daniel Hoyer opens the door into the world of Vietnamese cooking methods and theories, as well as to the background of the cuisine, and gives some historical and cultural tidbits, all while showing just how broad the scope of this simple, agriculturally based cuisine really is.

The American Housewife [2009]

A passage from the book... The writer does not deem any apology necessary for adding another to the long list of gastronomic works, provided she has accomplished the desirable object of producing a Cook Book which shall commend itself to all persons of true taste--that is to say, those whose taste has not been vitiated by a mode of cooking contrary to her own.

Great book for any cook's collection, recipes galore! From sweetmeats to calf heads... Back to the pure basics of cooking American classics.

Off The Menu [2011]

Have you ever heard of the staff meal, the ritual in which a restaurant's staff will sit down together for a meal before they open for service? If you're like me, you might find yourself a little envious of that meal and curious, too, about what they eat. Marissa Guggiana must have been interested as well, because she sought out restaurants that took their staff meals seriously and paid them a visit, leaving with a handful of recipes and photos to share with us in her new book Off the Menu: Staff Meals from America's Top Restaurants.

Here you will find Pork Chilaquiles from Franny's in Brooklyn, Yakamein Soup (aka Old Sober) from Galatoire's in New Orleans, Meme's Meatloaf and Creamy Macaroni from Meme in Philadelphia. There's an Apple Crisp from Blue Hill at Stone Barns in Tarrytown, Cabbage Salad from AOC in Los Angeles, Chicken and Biscuits Casserole from Zingerman's Roadhouse in Ann Arbor. Tabard Inn in Washington DC offers Wild Boar Ragu, and from Frances in San Francisco there's Michaela's Empanadas.
